Watermelon Agua Fresca: The Ultimate Summer Party Drink

If there’s one drink that always disappears at summer parties, it’s fresh watermelon agua fresca. It’s light, refreshing, naturally sweet, and perfect for everything from backyard barbecues to Fourth of July celebrations, pool parties, and family gatherings.

I love to make this extra fun, and serve the agua fresca right inside a hollowed-out watermelon. Simply cut a small slice off the bottom so it sits flat, then slice off the top about 2–3 inches down. Scoop out the watermelon flesh, saving it for the drink, and blend it with cold water, fresh lime juice, and a little sweetener if desired. I always strain it for an extra-smooth drink and make sure there’s no seeds in it, then pour it back into the watermelon shell.

For serving, you have two great options:

  • Install a small beverage spigot near the bottom of the watermelon for a festive self-serve drink dispenser.
  • If you don’t have a spigot, simply place a ladle inside the watermelon and let guests serve themselves—it works just as well and takes only minutes to set up.

Whether you’re hosting a holiday cookout, birthday party, or casual afternoon with friends, this is one of those recipes that instantly becomes the centerpiece of the table. It’s beautiful, delicious, and always gets people talking.

Ingredients
  

  • 8 cups seedless watermelon, cubed
  • 2 cups cold water, sparkling water, or club soda for fizz (if using sparkling or club soda don't add until ready to serve)
  • 1/4 cup fresh lime juice (about 2-3 limes)
  • 2-3 tablespoons honey or simple syrup (optional depending on sweetness of watermelon)
  • 8-10 fresh mint leaves
  • 2 cups ice
Optional Garnishes
  • fresh watermelon wedges
  • lime slices
  • fresh mint sprigs
  • frozen berry ices cubes
  • fresh blueberries and strawberries

Equipment

  • Large Cutting Board
  • large chef's knife
  • melon baller or scoop spoon
  • blender
  • fine-mesh strainer
  • large pitcher
  • beverage spigot/ or ladle
  • measuring cups
  • citrus juicer or reamer

Method
 

  1. Add the watermelon cubes, water, lime juice, honey (if using), and mint leaves to a blender.
  2. Blend until smooth, about 1 minute.
  3. Taste and add additional honey or lime juice if desired.
  4. For a smoother drink, strain through a fine mesh sieve or strainer. If you prefer a more natural texture, skip this step.
  5. chill until ready to serve.
  6. Tip: If you’d like a sparkling version, wait to stir in chilled sparkling water or club soda until just before serving. Adding it too early and refrigerating the drink will cause it to lose its fizz. For the best bubbles, prepare the watermelon mixture ahead of time, chill it, then gently stir in the sparkling water right before pouring into the watermelon dispenser or serving glasses.
