My Favorite Pasta Salad Recipe Inspired by Our Years in Germany

Jump to Recipe

Some recipes become family favorites because they’re easy to make. Others become favorites because they’re tied to a special memory. This pasta salad is both.

I first discovered this recipe while living in Germany. One of my fellow expat friends shared it with me, and after making it once, it quickly became a staple for summer gatherings, backyard barbecues, and casual family dinners. Over the years, I’ve put my own spin on it, and now it’s one of those recipes my family requests again and again.

One of my favorite changes is swapping traditional balsamic vinegar for white balsamic vinegar. It creates a lighter, brighter dressing that lets the fresh ingredients shine. I also love stepping outside to snip fresh mint from my garden before tossing everything together. The mint adds an unexpected freshness that makes this pasta salad truly special.

Whether you’re hosting a summer cookout, attending a potluck, or simply looking for an easy side dish, this pasta salad never disappoints.

Instructions on Making the Pasta Salad

This salad comes together very quickly and easily.

Step 1: Cook the Pasta

Cook the bow tie pasta according to package directions until al dente. Drain and rinse with cold water to stop the cooking process. Allow the pasta to cool completely.

Step 2: Prepare the Ingredients

While the pasta cools:

  • Chop the spinach
  • Cube the feta cheese
  • Slice the tomatoes in half
  • Finely chop the fresh mint

Step 3: Make the Dressing

In a small bowl or mason jar, whisk together:

  • White balsamic vinegar
  • Olive oil
  • Salt and Pepper to taste

Mix until well combined. Adjust ingredients according to your taste.

Step 4: Assemble the Salad

In a large serving bowl combine:

  • Cooked pasta
  • Chopped spinach
  • Feta cheese
  • Tomatoes
  • Fresh mint

Pour the dressing over the top and gently toss until everything is evenly coated.

Step 5: Chill and Serve

For the best flavor, refrigerate for at least one hour before serving. This allows the dressing to soak into the pasta and the flavors to blend together beautifully.

Frequently Asked Questions

Can I make this pasta salad ahead of time?

Yes. This is an excellent make ahead recipe. Prepare it up to one day in advance and store it covered in the refrigerator until ready to serve.

Can I use white balsamic vinegar instead of regular balsamic?

Absolutely. White balsamic vinegar creates a lighter flavor and keeps the pasta salad looking bright and fresh.

What type of feta works best?

I prefer using feta packed in brine because it tends to be creamier and more flavorful than pre-crumbled varieties.

Can I use different pasta shape?

Yes. Rotini, penne, fusilli or farfalle all work well.

Is this recipe vegetarian?

Yes, as written it is vegetarian.

Can I add protein?

Grilled chicken or steak make wonderful additions if you’d like to serve this as a main dish.

Storage Instructions

Store leftovers in an airtight container in the refrigerator for up to 3 days. Because spinach and mint naturally soften over time, this salad is best enjoyed within the first 24-48 hours.
