One-Pot Homemade Hamburger Helper

There are some dinners that become part of the regular rotation simply because everyone in the house loves them, and this homemade Hamburger Helper is one of those meals for us. My kids ask for it regularly, which automatically makes it a winner in my book.

It has all the comfort-food appeal of the boxed Hamburger Helper many of us grew up with, but this version is made from simple ingredients: ground beef, macaroni, tomatoes, seasonings and plenty of cheddar cheese. Everything cooks together in one pot, so the pasta absorbs all of that savory tomato and beef flavor as it cooks.

It’s warm, cheesy, filling and exactly the kind of dinner I want on a busy school night when everyone comes home hungry.

Why We Love This Homemade Hamburger Helper

Besides the fact that my kids genuinely request it, I love that this is a one-pot dinner. There’s no separate pot of pasta to boil and drain, and very little cleanup afterward. It’s also easy to adjust depending on what you have in the refrigerator. The carrot and celery are completely optional, but they’re an easy way to sneak a few vegetables into dinner.

And unlike some homemade Hamburger Helper recipes, this version has a tomato-based sauce rather than an overly heavy cheese sauce. The cheddar makes it creamy and comforting without taking over the whole dish.

What to Serve With Homemade Hamburger Helper

This is already a filling one-pot meal, so I usually think simple when it comes to sides. A green salad, steamed broccoli, green beans or roasted vegetables are all easy choices. And if everyone comes home absolutely starving, a little garlic bread alongside it certainly doesn’t hurt.

Tips and Helpful Hints

A Note About the Spice– hot sauce adds flavor as well as a little heat. If you’re making this for younger kids or anyone who prefers mild food, you can reduce the amount or leave it out completely. The chili powder used here is the American-style chili powder blend, rather than pure ground chile pepper.

Don’t Overcook the Pasta – Because the macaroni cooks directly in the sauce, keep an eye on it toward the end of the cooking time. You want the pasta tender but still slightly firm. If you cook it until it is extremely soft in the pot, it can become mushy as it sits. And don’t worry if the mixture looks a little saucier than you expect when you first turn off the heat. The pasta will continue soaking up some of that liquid.

Can I Add More Vegetables? – Absolutely. This is a really easy dinner to customize. Along with the optional carrots and celery, you could add finely chopped:

  • Bell peppers
  • corn
  • Zucchini
  • Spinach

Just remember that vegetables that release a lot of water can change the consistency of the sauce, so I wouldn’t add too many at once.

What Kind of Cheese Works Best? – I like cheddar because it gives this dish the classic cheesy Hamburger Helper flavor. A medium or sharp cheddar works especially well because you get plenty of flavor without needing an enormous amount of cheese. Freshly shredded cheese also tends to melt more smoothly than pre-shredded cheese, although either will work on a busy weeknight.

  • 2 cups chicken broth/stock
  • 1 tbs Sriracha sauce, adjust to taste
  • 1 tsp chili powder
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 28 oz. crushed tomato
  • 2 tbs tomato paste
  • 1 1/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 1/2- 2 cups shredded cheddar cheese
Garnish:
  • 1 green onion, sliced

Equipment

  • large dutch oven or deep skillet with lid
  • wooden spoon or spatula
  • Cutting Board
  • chef's knife
  • Measuring Cups and Spoons
  • cheese grater is shredding cheese from a block

Method

Step 1: Heat the olive oil in a Dutch oven or large, deep skillet over medium-high heat.
  1. Add the chopped onion and minced garlic and cook for about 1 minute, stirring frequently.
Step 2: Add the vegetables
  1. Add carrot and celery to the pan and cook for another 2–3 minutes, until they begin to soften.
Step 3. Brown the beef
  1. Increase the heat slightly and add the ground beef.
  2. Cook for about 3–5 minutes, breaking the beef apart with a wooden spoon as it cooks, until no pink remains.
  3. If there is a significant amount of grease in the pan, carefully drain the excess before continuing.
Step 4: Build the sauce
  1. Add the chicken broth, hot sauce, chili powder, oregano, garlic powder, crushed tomatoes, tomato paste, salt and black pepper.
  2. Stir everything together well.
Step 5: Add the macaroni
  1. Stir the uncooked macaroni directly into the beef and tomato mixture.
  2. Bring everything to a gentle simmer, then reduce the heat to medium-low.
Step 6: Cook the pasta
  1. Cover the pot and cook for approximately 8–10 minutes, stirring once or twice so the pasta doesn’t stick to the bottom.
  2. The pasta should be al dente, just tender, and there should still be some sauce remaining in the pan.
  3. Keep in mind that the macaroni will continue absorbing the sauce as it sits.
Step 7: Add the cheddar
  1. Remove the lid and stir in 1 1/2 cups of shredded cheddar cheese.
  2. For an extra-cheesy version, add closer to 2 cups.
  3. Stir until the cheese is completely melted and the sauce is creamy.
  4. Remove from the heat, top with sliced green onions if desired. Serve immediately.

Notes

Storing Leftovers

Store leftover Hamburger Helper in an airtight container in the refrigerator for up to about 3–4 days. The pasta will continue absorbing some of the sauce as it sits. When reheating, add a splash of chicken broth or water before warming it gently on the stovetop or in the microwave.
