Easy Shrimp Tacos with Creamy Avocado Sauce & Fresh Pico de Gallo

As the weather starts warming up, I naturally begin craving lighter meals that still feel satisfying. Shrimp tacos are one of my favorite go-to dinners this time of year because they’re quick, fresh, packed with flavor, and full of protein without feeling heavy.
They’re also incredibly versatile — perfect for casual family dinners, outdoor gatherings, or even an easy weeknight meal after a busy day.
One of the things I love most about shrimp is how quickly it cooks while still providing important nutrients like lean protein, omega-3 fatty acids, selenium, iodine, and vitamin B12. Shrimp are also low in calories too and a good source of antioxidants like astaxanthin. Making sure to get enough protein becomes especially important as we get older because it helps support muscle health, energy levels, and overall wellness.
And honestly… shrimp just feel like summer!
Pairing the shrimp with fresh avocado sauce, lime, and pico de gallo creates a meal that feels both healthy and satisfying. The avocado sauce takes these tacos to the next level. It’s creamy, fresh, and balances perfectly with the warm shrimp and spices. The fresh pico adds brightness and freshness that pairs perfectly with shrimp tacos, especially during warmer weather. Both of the sauces come together really quick, but I like to make them ahead of time, so they each have time to marinate in the fridge, and all those yummy flavors come alive. I also heat up the tortillas on the stove before serving, and do this while the shrimp are cooking on the stove. Cooking the shrimp up in my homemade seasonings and serving them on fun tacos plates makes them easy to garnish, serve, and enjoy for a fun warm weather dinner at home.
I love serving shrimp tacos outside on warm evenings with fresh fruit, tortilla chips, and sparkling water or margaritas. It instantly feels like summer without spending hours in the kitchen. But these can easily be a quick weeknight meal that is both tasty and satisfying!

Easy Shrimp Tacos
Ingredients
Shrimp Tacos
- 1 lb Shrimp, peeled and deveined
- 1 tbsp chilli powder
- 2 tsp ground cumin
- 2 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp cayenne pepper
- 1/2 tsp kosher salt
- small flour or corn tortillas
- fresh cilantro
- lime wedges
- crumbled cotija cheese (optional)
Creamy Avocado Sauce
- 1 ripe avocado
- 1/2 cup plain Greek yogurt
- 1-2 limes, juiced
- 1 garlic clove
- handful of cilantro
- salt and pepper to taste
- 1-2 tbsp water (to thin if needed)
Pico de Gallo
- 1 lb Grape tomatoes I like using heirloom tomatoes for all the color
- 1/4 cup red onion, diced
- 1 jalapeno, diced
- 1 garlic clove, diced
- handful of chopped cilantro
- 1 lime juiced
- salt and pepper to taste
Instructions
Directions for Shrimp
- In a small bowl mix together seasonings and set aside.
- Pat shrimp dry and toss with olive oil and 2 Tbsp of the seasoning mix.
- Heat skillet over medium – high heat.
- cook shrimp for about 2-3 minutes per side until pink and opaque.
- Warm tortillas.
- Assemble tacos with avocado sauce, pico de gallo, limes, cilantro and cheese.
- Serve immediately with extra lime wedges.
Directions for Creamy Avocado Sauce
- Add everything to a blender or food processor and blend until smooth and creamy. Add a little water if needed to thin the sauce. Place it in a bowl with a lid, and put it in the fridge so the flavors can come together before serving. At least 30 minutes.
