Easy Shrimp Tacos

These tacos are packed with fresh ingredients, lean protein, and bold flavor - making them perfect for casual summer dinners, taco nights or quick weeknight meals.

Ingredients
  

Shrimp Tacos
  • 1 lb Shrimp, peeled and deveined
  • 1 tbsp chilli powder
  • 2 tsp ground cumin
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper
  • 1/2 tsp kosher salt
  • small flour or corn tortillas
  • fresh cilantro
  • lime wedges
  • crumbled cotija cheese (optional)
Creamy Avocado Sauce
  • 1 ripe avocado
  • 1/2 cup plain Greek yogurt
  • 1-2 limes, juiced
  • 1 garlic clove
  • handful of cilantro
  • salt and pepper to taste
  • 1-2 tbsp water (to thin if needed)
Pico de Gallo
  • 1 lb Grape tomatoes I like using heirloom tomatoes for all the color
  • 1/4 cup red onion, diced
  • 1 jalapeno, diced
  • 1 garlic clove, diced
  • handful of chopped cilantro
  • 1 lime juiced
  • salt and pepper to taste

Method
 

Directions for Shrimp
  1. In a small bowl mix together seasonings and set aside.
  2. Pat shrimp dry and toss with olive oil and 2 Tbsp of the seasoning mix.
  3. Heat skillet over medium - high heat.
  4. cook shrimp for about 2-3 minutes per side until pink and opaque.
  5. Warm tortillas.
  6. Assemble tacos with avocado sauce, pico de gallo, limes, cilantro and cheese.
  7. Serve immediately with extra lime wedges.
Directions for Creamy Avocado Sauce
  1. Add everything to a blender or food processor and blend until smooth and creamy. Add a little water if needed to thin the sauce. Place it in a bowl with a lid, and put it in the fridge so the flavors can come together before serving. At least 30 minutes.

  1. Add everything to a blender or food processor and pulse until it becomes the consistency you want. Add it to a bowl with lid, and place it in the fridge before serving so the flavors can come together. At least 30 minutes.
