Directions for Shrimp
- In a small bowl mix together seasonings and set aside.
- Pat shrimp dry and toss with olive oil and 2 Tbsp of the seasoning mix.
- Heat skillet over medium - high heat.
- cook shrimp for about 2-3 minutes per side until pink and opaque.
- Warm tortillas.
- Assemble tacos with avocado sauce, pico de gallo, limes, cilantro and cheese.
- Serve immediately with extra lime wedges.
Directions for Creamy Avocado Sauce
- Add everything to a blender or food processor and blend until smooth and creamy. Add a little water if needed to thin the sauce. Place it in a bowl with a lid, and put it in the fridge so the flavors can come together before serving. At least 30 minutes.
