The Best Summer Peach or Nectarine Crisp Recipe (Easy, Buttery & Perfect with Vanilla Ice Cream)

The Best Summer Peach or Nectarine Crisp Recipe

Jump to Recipe

There are some recipes that become part of your family’s traditions, and this is one of ours. Every summer, when peaches and nectarines are at their sweetest, this crisp is the dessert everyone requests. It fills the kitchen with the smell of warm fruit, butter, oats, and cinnamon, and it’s nearly impossible to wait for it to cool before digging in.

My favorite way to serve it is still warm from the oven with a generous scoop of vanilla ice cream melting into all those sweet, bubbling juices. It’s simple, rustic, and honestly one of the best desserts of summer.

What I love even more is that this recipe works as the perfect base for almost any fruit crisp. Throughout the year I simply swap the fruit depending on what’s in season. Fresh peaches, nectarines, apples in the fall, or a mix of berries all turn out beautifully with the same buttery topping.

If you’re looking for an easy dessert that always impresses, this is the recipe you’ll make over and over again.

Why You’ll Love This Crisp Recipe

  • Uses fresh seasonal fruits, and easily adapted for peaches, nectarines, apples, blueberries, triple berry, or cherries
  • A buttery oat topping that’s crisp and golden
  • Easy enough for weeknights but perfect for entertaining
  • Delicious served warm with vanilla ice cream

My Favorite Fruit Variations

This is one of those recipe that works year-round. Here are some of my favorite fruit variations that our family loves:

  • Fresh peaches
  • Nectarines
  • Triple berry (blueberries, raspberries, blackberries)
  • Apples with extra cinnamon
  • Cherries
  • Peach and blueberry
  • Strawberry rhubarb

Tips for the Best Fruit Crisp

1 . Use ripe fruit that’s fragrant and slightly soft for the best flavor.

2. If your fruit is especially juicy, don’t skip the cornstarch—it helps create a perfectly thick filling instead of a watery dessert.

3. Always use cold butter for the topping. Cold butter creates those irresistible buttery crumbles that bake into a crisp, golden topping.

4. Let the crisp cool for at least 10–15 minutes before serving so the filling can set slightly.

What to Serve with Peach Crisp

While vanilla ice cream is my favorite pairing, it’s also wonderful with:

  • Fresh whipped cream
  • Cinnamon ice cream
  • Homemade vanilla bean ice cream
  • Greek yogurt for brunch
  • A drizzle of caramel sauce

How to Store Leftovers

Cover leftovers and refrigerate for up to four days. To reheat, place individual servings in the microwave for about 30 seconds, or warm the entire baking dish in a 325°F oven until heated through.

Frequently Asked Questions

Can I use peaches instead of nectarines? Absolutely! I make this recipe with both. The topping works beautifully with either fruit.

Can I use frozen fruit? Yes, you can, but fresh fruit is my first choice for this recipe. Fresh fruits hold their shape better while baking, giving the crisp a thicker filling and a better texture.

Frozen fruit releases significantly more liquid as it bakes, which can make the filling thinner and more watery. If you’re using frozen fruits, do not thaw them first, and increase the cornstarch to 3½ tablespoons to help absorb the extra juices. You may also need to bake the crisp an additional 5–10 minutes until the filling is bubbling and thickened.

For the best flavor, texture, and presentation, I recommend making this crisp during the season with fresh, ripe fruit whenever possible. The results are well worth it!

Can I make this ahead of time? Yes. Assemble the crisp several hours ahead, refrigerate, then bake just before serving.

What’s the difference between a crisp and a crumble? A crisp includes oats in the topping, giving it that classic crunchy texture. A crumble usually has a streusel topping without oats.

Can I make this gluten-free? Yes. Substitute your favorite gluten-free flour blend and certified gluten-free oats.

Can I freeze peach crisp? Yes. Bake, cool completely, wrap well, and freeze for up to three months. Reheat in the oven until warmed through.

Servings: 8 servings
Course: Dessert

Ingredients

Fruit Filling:
  • 1 tablespoon softened butter (for greasing baking dish)
  • 5-6 pounds fresh nectarines or peaches, sliced (about 14-16 medium sized pieces)
  • 1 tablespoon lemon juice
  • 1/3 cup honey, agave nectar syrup, or maple syrup
  • 3 tablespoons cornstarch
  • 1/2 teaspoon ground cinnamon
  • pinch kosher salt
Crisp Topping
  • 1 cup all purpose flour
  • 1 cup old-fashioned oats
  • 1 cup brown sugar
  • 1/4 teaspoon cinnamon
  • pinch kosher salt
  • 2 sticks cold unsalted butter

Equipment

  • 9×13 baking dish
  • large mixing bowl
  • food processor or pastry cutter
  • Measuring Cups and Spoons
  • knife
  • Cutting Board
  • aluminum foil
  • cooling rack

Method

Instructions
  1. Preheat the oven to 350°F (175°C). Lightly butter a 9 x 13-inch baking dish with the softened butter and set aside.
Prepare the Fruit Filling
  1. In a large mixing bowl, gently combine the sliced peaches or nectarines with the lemon juice, honey (or agave nectar or pure maple syrup), cornstarch, ground cinnamon, and a pinch of kosher salt. Toss carefully until all of the fruit is evenly coated.
Transfer the fruit mixture to the prepared baking dish, spreading it into an even layer.
Make the Crisp Topping
  1. In a separate large bowl or a food processor, add the flour, old-fashioned oats, brown sugar, ¼ teaspoon cinnamon, a pinch of kosher salt and whisk or pulse in food processor 3-5 times, just until the ingredients are evenly combined. Be careful not to over process the oats and break them down too much.
Cut the cold butter into small cubes.
Using a pastry cutter, two knives, or your fingertips, work the butter into the dry ingredients until the mixture forms coarse, crumbly clusters with some pea-sized pieces remaining.
If using a food processor, pulse the cold butter cubes with the oat and flour mixture 8-10 times, or until the mixture resembles coarse crumbs with some peas sized pieces of butter remaining. Avoid over-processing, the topping should look crumbly, not like a dough.
Evenly sprinkle the topping over the fruit, covering it completely without pressing it down.
Bake
  1. Loosely cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and continue baking for 30–35 minutes, or until the topping is golden brown and crisp and the fruit is bubbling around the edges.
If the topping begins to brown too quickly after uncovering, loosely tent it with foil for the remainder of the baking time.
Remove the crisp from the oven and let it cool for 15–20 minutes before serving. This allows the fruit filling to thicken and makes it easier to serve.
Enjoy warm with a generous scoop of vanilla ice cream or a dollop of freshly whipped cream.

Notes

Recipe Notes
  • Sweetener Options: The recipe calls for honey, agave nectar, or pure maple syrup. If you would like to replace the sweetener with granulated sugar,  use ½ cup granulated sugar and reduce the cornstarch to 2 tablespoons.
  • Make It Your Own: This crisp recipe is a wonderful base for apples, pears, blueberries, blackberries, cherries, or a triple berry blend. Simply swap the fruit and enjoy it year-round.
  • Best Served Warm: There’s nothing better than a warm bowl of crisp topped with creamy vanilla ice cream as it melts into the buttery oat topping and sweet fruit filling. It’s my favorite way to enjoy this recipe!

Which fruit combination is your favorite?

While I love every version, nectarine and blueberry together might be my favorite. The sweet nectarines and juicy blueberries are the perfect combination, especially with cinnamon and vanilla ice cream.
