Shrimp Salad with Mango, Avocado & Honey Lime Dressing
This is the salad I’ve been eating on repeat lately this summer. Its everything you want in a fresh, satisfying meal—light, colorful, and packed with flavor. This vibrant Shrimp Salad is packed with juicy shrimp, sweet mango, creamy avocado, crisp vegetables, ripe tomatoes, and a bright, tangy honey lime dressing that ties it all together. It’s essentially the ultimate mango avocado salad, upgraded with protein-rich shrimp and a hint of jalapeño heat for balance.
Perfect for warm-weather lunches, easy dinners, or entertaining, this salad comes together quickly and feels both refreshing and substantial. Every bite delivers a mix of sweet, savory, creamy, and citrusy flavors that make it hard to stop eating.
An Easy Shrimp Salad for Lunch or Dinner
I love a salad that can actually stand on its own as a meal, and this one definitely can. The shrimp adds plenty of protein, while avocado gives it richness and the mango brings just the right amount of sweetness.
I added finely diced jalapeño for a little kick and quartered grape tomatoes for another layer of freshness and color, while the crunch of celery and bite of the red onion takes it to the next level. Once everything is tossed in the simple honey lime dressing, all of those flavors come together beautifully.
And while there are several ingredients to chop, there really isn’t much cooking involved. The shrimp takes just a few minutes, making this an easy recipe for nights when you want something homemade without spending a lot of time in the kitchen. For an even easier shortcut, you can use ready cooked shrimp from the grocery store. Just remove the tails, give the shrimp a quick rinse, pat them dry, and they’re ready to add to the salad – no cooking required.
Can I Make This Shrimp Salad Ahead?
You can prepare most of this salad ahead of time, but I wouldn’t completely assemble it until you’re ready to eat.
The shrimp can be cooked a day ahead and stored covered in the refrigerator. You can also chop the celery, bell pepper, tomatoes, red onion, jalapeño, and mango ahead of time and keep them refrigerated.
The honey lime dressing can also be made ahead and stored in a covered container or jar in the refrigerator. Give it a good shake or whisk before using.
Wait to cut the avocado until shortly before serving. This keeps it from turning brown and prevents it from becoming too soft in the salad. Then simply toss everything together when you’re ready to eat.
What to Serve with Mango Avocado Shrimp Salad
This shrimp salad is filling enough to enjoy on its own for a light lunch or dinner, but there are plenty of ways to turn it into a larger meal. Serve it with warm crusty bread or tortilla chips for scooping up all of that mango, avocado, and honey lime dressing.
You could also spoon it over mixed greens, serve it alongside rice, or tuck it into lettuce cups for an easy lunch. For entertaining, I love the idea of serving it as part of a summer spread with grilled corn, fresh bread, and something cold to drink.
Easy Variations
One of the nice things about this recipe is how easy it is to adjust depending on what you have on hand. Add fresh corn or grilled corn for even more summer flavor. Black beans would make the salad heartier, while diced cucumber would add even more crunch. You could also replace the shrimp with grilled chicken or salmon. And if cilantro isn’t your favorite, simply leave it out.
Tips for the Best Shrimp Salad
Use ripe but still firm avocados so they hold their shape when the salad is tossed.
Look for mangoes that give slightly when gently pressed. You want them sweet and juicy but not so soft that they fall apart.
Don’t overcook the shrimp. Two to three minutes is usually plenty, depending on their size. Otherwise it can become tough and chewy.
Dice the jalapeño very finely so you get a little flavor and heat throughout the salad rather than a big piece in one bite. If you like more heat, you can leave a few of the jalapeño seeds in when you chop it. For a milder salad, start with half of the jalapeño and add more to taste.
And most importantly, wait until just before serving to add the avocado and dressing. The salad will look fresher and have a much better texture.

Ingredients
Equipment
Method
- Bring a pot of water to boil. While the water is coming to a boil, fill a bowl with ice and cold water and set aside.
- Once the pot of water has come to a boil, add the cleaned and deveined shrimp to the boiling water and cook for about 2 to 3 minutes, just until they turn pink and are cooked through. Be careful not to overcook them or they can become tough. As soon as the shrimp are finished cooking, transfer them directly to the ice bath. Let them sit for a few minutes to cool, then drain and pat dry.
- While the shrimp cool, prepare the remaining salad ingredients. Dice the mangos, avocado, celery, and red bell pepper, quarter the grape tomatoes, and finely chop the red onion and cilantro. Remove the seeds and membrane from the jalapeño and dice it very finely. Removing the seeds keeps the heat fairly mild while still giving the salad a fresh little kick.
- In a small bowl or glass measuring cup, whisk together the olive oil, fresh lime juice, honey, minced garlic, salt and pepper. Taste the dressing and adjust the seasoning if necessary. If your limes are particularly tart, you can add just a touch more honey.
- Add the cooled shrimp, mango, celery, bell pepper, tomatoes, jalapeño, cilantro and red onion to a large serving bowl. Add the avocado last so it doesn't get mashed while you are mixing everything together. Pour the dressing over the salad and gently toss until everything is lightly coated. Place in refrigerator to let the ingredients come together before serving.
Notes
Fresh, Colorful and So Easy
I hope you love this Shrimp Salad with Mango, Avocado & Honey Lime Dressing as much as I do. It’s exactly the kind of recipe I reach for when I want something fresh but still filling.
The combination of tender shrimp, sweet mango, creamy avocado, grape tomatoes, crunchy vegetables, fresh cilantro, and just a little jalapeño makes every bite different. The simple honey lime dressing pulls everything together without covering up all of those fresh flavors.
It’s easy enough for a weeknight dinner but pretty enough to serve when you’re entertaining—which is always my favorite kind of recipe.
