The Beef Enchiladas Everyone Went Back For

Easy Cheesy Beef Enchiladas for a Simple Family Dinner

There are some recipes you make once and immediately know they’re going into the regular dinner rotation. These easy cheesy beef enchiladas are one of them – and after making a batch, I already know they’ll be making another appearance on our dinner table.

I wanted a beef enchilada recipe that was easy enough for a weeknight, didn’t require a long list of ingredients, and still had plenty of flavor. This one checked every box—and, most importantly, everyone loved it.

The filling is simple: seasoned ground beef, onions, and green chiles with just enough enchilada sauce mixed in to keep everything moist and flavorful. Add plenty of cheese, roll it all into soft flour tortillas, cover with more red enchilada sauce and cheese, and bake until everything is hot and bubbly.

Nothing fancy.

Nothing complicated.

Just really good comfort food.

And considering how quickly the pan disappeared, I’d say this recipe was a definite success!

Why You’ll Love These Beef Enchiladas

These are exactly the kind of dinner I like to have in my back pocket for busy nights. They’re easy to make with everyday ingredients, full of flavor, and have just the right amount of cheesy, saucy goodness.

Nothing complicated, just a satisfying homemade dinner that everyone will enjoy.

Another reason I love this recipe is that you can assemble everything ahead of time and pop it in the oven when you’re ready for dinner. And if you’re lucky enough to have leftovers, they’re just as delicious the next day.

What to Serve With Beef Enchiladas

You can make these as simple or as dressed up as you want. For an easy weeknight dinner, I would serve them with Mexican-style rice and a simple green salad. Black beans or refried beans are another easy addition.

If we’re making more of a Mexican-inspired dinner night, I’d put out bowls of toppings and let everyone add their own. Try:

  • Sour cream
  • Fresh cilantro
  • Diced avocado or guacamole
  • Sliced green onions
  • Pico de gallo
  • Chopped tomatoes
  • Jalapeños
  • Lime wedges

And, of course, tortilla chips and salsa

A Few Tips I’ve Learned and FAQ’s

Don’t skip the sauce in the beef. Adding that small amount of enchilada sauce directly to the meat keeps the filling moist and gives you flavor throughout the enchilada instead of just on top.

Use a cheese that melts well. A Monterey Jack and cheddar combination gives you both creaminess and flavor.

Don’t overfill the tortillas. It’s tempting, but they’ll be much easier to roll—and stay together—if you divide the filling evenly among all eight.

Place them seam-side down. This keeps the enchiladas rolled while they’re baking.

Make them your own. If your family likes more heat, use a spicier enchilada sauce, add jalapeños or increase the chili powder. If you’re cooking for people who prefer things mild, the recipe is delicious exactly as written.

Can You Make Beef Enchiladas Ahead of Time? Yes, which is another reason I love this recipe.

Prepare the enchiladas through the rolling step and arrange them in your baking dish. Cover and refrigerate until you’re ready to bake. I prefer adding the remaining enchilada sauce and cheese shortly before they go into the oven so the tortillas don’t sit in the sauce for too long and become overly soft. If you’re baking them straight from the refrigerator, they may need a few additional minutes in the oven.

Leftovers

Store leftover enchiladas covered in the refrigerator for up to 3–4 days. Reheat individual servings in the microwave, or cover the baking dish with foil and warm the enchiladas in the oven until heated through.

They’re also very good for lunch the next day—which is one of my favorite things about making a big pan of enchiladas.

Course: Main Course

Ingredients

  • 2 lb ground beef
  • 1 small onion, diced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/2 tsp dried oregano
  • 1 small 4oz. can fire roasted green chiles, optional
  • 2-2 1/2 cups shredded Monterey Jack and cheddar cheese
  • 12 taco-size flour tortillas, about 8 inches
  • 32 ounces red enchilada sauce

Equipment

  • Large skillet for browning the ground beef
  • Wooden Spoons
  • Measuring spoons
  • Cutting Board
  • chef's knife
  • 9×13-inch baking dish, plus an additional dish if needed
  • aluminum foil

Method

Preheat the Oven
  1. Preheat your oven to 400°F. Lightly grease your baking dish if desired.
Brown the Ground Beef
  1. In a large skillet over medium heat, cook the 2 pounds of ground beef with ½ small diced onion, breaking the meat apart as it browns. Cook until the beef is no longer pink and the onions have softened, approximately 8–10 minutes. Drain any excess grease.
Season the Beef
  1. Add 1 teaspoon chili powder, 1 teaspoon cumin, ½ teaspoon garlic powder, ½ teaspoon kosher salt, and ¼ teaspoon dried oregano. Stir well to distribute the seasonings throughout the beef.
  2. If using mild green chiles, stir in the 4-ounce can.
Add Enchilada Sauce to the Filling
  1. Pour approximately ¼ cup of the red enchilada sauce into the seasoned beef and stir to combine. This keeps the filling moist and adds extra flavor.
  2. For an extra-cheesy filling, stir in about ½ cup of the shredded cheese until combined.
Prepare the Baking Dish
  1. Spread a thin layer of enchilada sauce across the bottom of your baking dish. This prevents sticking and keeps the bottoms of the tortillas from drying out.
Fill and Roll the Enchiladas
  1. Pour some of the red enchilada sauce into a shallow dish or plate. Dip the tortilla into the sauce, lightly coat both sides of the tortilla.
  2. Place the sauce-coated tortilla on a clean work surface. Spoon a portion of the seasoned ground beef mixture down the center and sprinkle with shredded cheese.
  3. Roll the tortilla up tightly and place it seam side down in the prepared baking dish.
  4. Repeat with the remaining tortillas and ground beef mixture until all are assembled. Use a second baking dish if needed.
Add the Sauce and Cheese
  1. Pour the remaining enchilada sauce evenly over the rolled tortillas, making sure they’re generously covered.
  2. Sprinkle the remaining shredded Monterey Jack and cheddar cheese over the top.
Bake Until Bubbly
  1. Place the baking dish in the preheated oven and bake uncovered for approximately 12–15 minutes, or until the sauce is bubbling around the edges and the cheese is completely melted. Because the beef is already cooked, you’re simply heating everything through and melting the cheese.
  2. If the enchiladas were assembled ahead and refrigerated, allow additional baking time until the centers are thoroughly heated.
Rest and Serve
  1. Remove the enchiladas from the oven and let them rest for approximately 5 minutes before serving.
  2. Garnish with fresh cilantro, sour cream, sliced avocado, green onions, or your favorite toppings.
  3. Serve with Mexican-style rice, beans, or a simple green salad for an easy, satisfying family dinner.
