Make the Tzatziki:
- Finely shred the cucumber and place it in a clean kitchen towel or several layers of paper towels. Squeeze out as much excess moisture as possible.
- Add the cucumber to a small bowl with the Greek yogurt, fresh dill, garlic and salt. Stir everything together until well combined. Cover and refrigerate until you’re ready to serve.
Prepare Greek Seasoning:
- In a bowl, add all ingredients and mix together until combined. Set aside.
- Any leftover seasoning store in an airtight container.
Make the Greek Chicken Tacos:
- Place the ground chicken in a bowl and add the Greek Seasoning. Gently mix with your hands until the seasoning is evenly distributed throughout the chicken.
- Lay the tortillas on a clean work surface.
- Take a small portion of the seasoned ground chicken and spread it directly onto one side of each tortilla. Press the chicken into a very thin, even layer, spreading it almost all the way to the edges.
- Heat a large nonstick skillet or griddle over medium-high heat and lightly coat it with olive oil.
- Place the tortillas chicken-side down onto the hot cooking surface.
- Cook for about 3–4 minutes without moving them, until the chicken is browned and completely cooked through. Ground chicken should reach an internal temperature of 165°F.
- Flip the tortillas and cook for another minute, just until the tortilla is warmed and lightly toasted.
- Remove from the pan and repeat with the remaining tacos.
Layer on the Toppings:
- Spread tzatziki over the cooked chicken and then layer on the sliced cucumber, tomato and red onion.
- Add a little crumbled feta if you like, although they’re delicious without it.
- Serve immediately while the chicken and tortilla are warm and the vegetables are still cool and crisp.
