Crockpot Pulled Pork

This easy crockpot pulled pork is made with just boneless pork shoulder or pork butt, kosher salt and black pepper. Slow cooking it on low for 8 hours creates tender juicy pork that practically falls apart. Shred it and use it for BBQ pulled pork sandwiches, carnitas, tacos, nachos, rice bowls, quesadillas, loaded potatoes, and more.

Ingredients
  

  • 3.5- 5 pounds boneless pork shoulder or pork butt
  • kosher salt
  • freshly ground black pepper

  • two forks

Method
 

  1. Remove pork from its packaging, and pat it dry with paper towels.
  2. Season the pork evenly on all sides with kosher salt and black pepper.
  3. Place seasoned pork in slow cooker and cook on low for 8 hours.
  4. Check the pork at the end of the cooking time. It should be very tender and pull apart easily with two forks. Cooking times can vary slightly depending on the size of the roast and the slow cooker.
  5. Carefully transfer the pork to a large cutting board or serving dish. Let it rest to approximately 10 minutes. Shred using two forks, discarding any large pieces of fat. Skim excess fat from the cooking liquid. Add a small amount of the remaining juices back to the shredded pork to keep in moist. Serve immediately or divide into portions for several different meals.
